Ingredients

  • 2 tablespoons lime juice
  • 2 teaspoons rice vinegar
  • 1 teaspoon honey
  • ½ teaspoon salt
  • 1 tablespoon minced shallot
  • A pinch of cayenne pepper
  • 4 peeled and diced kiwis
  • 2 firm and ripe bananas - diagonally cut into inch-thick pieces or slices
  • ½ cup diced red bell pepper
  • 2 tablespoons thinly sliced fresh mint
  • 2 tablespoons chopped and toasted cashews

Preparation Directions

Step 1: Squeeze the lime juice and combine together in a bowl with shallots, vinegar, oil, honey, cayenne pepper, and salt.

Step 2: Add the bananas, kiwis, bell pepper, and mint.

Step 3: Toss together the ingredients.

Step 4: Prepare for serving, and sprinkle chopped and toasted cashews on top.

Ingredients

  • 1 orange
  • 1 avocado
  • A handful of baby spinach
  • 5 leaves of watercress
  • 1 teaspoon maple syrup
  • 1 tablespoon orange juice
  • 4 tablespoons olive oil
  • 1 tablespoon shallot

Preparation Directions

Step 1: Mix together olive oil, orange juice, and maple syrup in a bowl.

Step 2: Remove the tough stems from the watercress leaves, and chop them into small pieces. Wash both the baby spinach and watercress leaves (try running them under water to clean thoroughly. 

Step 3: Peel the orange and remove any seeds. Cut the orange pieces into half and finely chop the shallot.

Step 4: Peel the avocado and cut it in half. After removing the seed, slice the avocado into smaller pieces. 

Step 5: Combine all salad ingredients together in a bowl except the salad dressing. Pour the dressing over the mixed ingredients to serve.

  • 1/8 cup sesame oil
  • 1/2 tablespoon sherry vinegar
  • 1/2 tablespoon balsamic vinegar
  • 1/2 tablespoon hot chili oil
  • 4 oranges
  • 1 avocado
  • 1/2 small shallot
  • 1/8 cup chopped fresh mint
  • 1/8 cup fresh cilantro leaves

Preparation Directions

Step 1: Whisk together the sesame oil, tamari, sherry vinegar, balsamic vinegar, chili oil, and sugar in a bowl for 20 seconds to make the vinaigrette.

Step 2: Cut the oranges into slices. Evenly divide the orange slices and avocado slices between 4 salad plates. Sprinkle the shallot slices. 

Step 3: Drizzle each salad plate with 1 tablespoon of the vinaigrette. Sprinkle it with mint and cilantro leaves.
